How do I check that my device actually takes AAAA and not AAA?

Take the old cell out and read it. It will be marked AAAA, or with a code such as LR8D425. An AAAA is visibly thinner and shorter than an AAA, so if the old cell is the same girth as a normal pen battery it is not this size.

Can I fit an AAA or an AA in place of one of these?

No. All three are 1.5V cells, but the AAAA is a smaller diameter and a shorter body, so a larger cell will not sit in the contacts and should not be forced in.

How many cells do I receive, and what is the smallest order?

Are these rechargeable?

It is better not to. Where equipment takes a pair, fitting two fresh cells of the same size and chemistry together keeps the voltage even and avoids one cell being pulled down by the other.
