Description

The Niju is a chopping board cut from a single piece of mango wood, 38cm long including the handle, 20cm wide and 2cm thick. The working face is a rectangle with the four corners drawn into deep curves, and a short rounded paddle handle runs off the top edge. A hole is bored through the handle and a thin leather thong is knotted through it. The wood is a pale blond with the grain running the length of the board, and the face is left flat with no groove cut into it.

At 38 by 20cm this is the smallest of the three Niju boards, which puts it at about the size of a large loaf, with room for the slices beside it. That makes it a board to bring to a table with bread, cheese or tapas on it rather than the one to prepare a whole meal on. The thong takes it onto a hook on a rail or the back of a door, so it can hang rather than take up drawer space.

The wood is mango. The trees are grown first for their fruit and picked over a number of years, and only once they stop bearing are they cut for timber, which lets the farmer plant again and takes a second income from the same tree. Nothing is applied to the surface, so the tone will shift with use. The thong is leather. The Niju is also made at 48 by 30cm and at 58 by 38cm.
