Description

The medium Niju is 48cm long including the handle, 30cm wide and 2cm thick, cut from a single piece of mango wood. The face is a rectangle with the corners taken into deep curves, and a short rounded paddle handle stands off the top edge, bored through for a thin leather thong. The wood is a pale blond and the grain runs the length of the board. Nothing is cut into the face, no groove and no lip.

At 48 by 30cm this is the middle of the three Niju boards, and 30cm of width is enough to work across rather than only along: a chicken to joint, a board of cheeses with the crackers beside them, or two or three tapas dishes set out at once. It weighs 1.315kg, which is enough that it does not shift under a knife. The three Niju sizes stack one on another.

The wood is mango. The trees are planted for fruit and cropped for a number of years before they stop bearing, and only then are they taken for timber, so the board comes from a tree that has already done its first job. Nothing is applied to the surface. The thong is leather. The Niju is also made at 38 by 20cm and at 58 by 38cm.
