Description

A large board in mango wood, 58cm long by 38cm wide and 2cm thick, with a short paddle handle running off one end. The corners are cut to a wide radius rather than left square, and the handle is rounded at its tip and pierced with a hole carrying a knotted leather loop. The wood is pale blond with the grain running the length of the board, and the tone shifts band to band across the width.

At 58 x 38cm this is the largest of the three Niju boards and it takes up a good part of a worktop. It carries a sliced loaf with the knife laid alongside, which is the second job it does: tapas, breads and anything laid out to pick at go from the board to the table without being moved onto a plate. The handle gives somewhere to hold it when it is carried full, and the leather loop hangs it from a hook or a rail when it is not in use.

The board is mango wood with a leather thong knotted through the handle, finished natural. Mango trees are grown first for their fruit and harvested over a number of years; only once a tree has stopped bearing is it cut for timber, which lets the farmer plant again and takes a second income from the same ground. Every board carries its own grain and its own tone, and the colour will shift over time as the board is used. The Niju is made in three sizes.
